The Traditional
Christmas Pudding
Christmas dinner isn't complete without the Christmas
pudding. Having originated as a 14th century porridge called frumenty which consisted of
boiled beef, the changes made to it with the addition of dried fruit, ale and spirits have
made it a traditional tasty end to the annual yuletide meal.
Following is just one recipe for this popular dessert.
A Rich Christmas Pudding
1 lb. raisins, 1 lb. currants, 1/2 lb. beef suet, 1/4 lb. sugar, 2 tbsps of flour, 3 eggs,
cup of sweetmeats, wineglass of brandy
Combine all ingredients, except brandy, and mix well. Boil in a mould for eight hours.
When finished remove mould, pour brandy over pudding and light for a flaming presentation.
